Helpful Hints for Baking with
Pamela's Chocolate Brownie Mix

1. Do not pack down mix in measuring cup.
2. Recipes may require additional baking time. If needed, continue baking and check in 3 to 5 minute intervals. Be careful to not overbake.
3. For high altitude baking, increase oven temperature by 25° and bake according to recipe directions.
4. When adding liquids, do not add all at one time, leave out a small amount and check dough for correct consistency.
5. The Celiac Sprue Association recommends that if you have Celiac Sprue, use only grainless baking powder, and flavorings without grain alcohol.
6. Ovens vary in temperature. You may need to alter baking times.
7. If your cookies spread too much, cut back the shortening or butter. Too crispy, cut back the sugar.
8. Unlike wheat flour recipes, cake batter should be thick for better rise.
9. Baking without wheat can be tricky, measure ingredients carefully.
