Apple Cinnamon Scones

Ingredients

    Yield:

  • 1 bag Pamela’s Biscuit and Scone Mix
  • 1 large egg
  • ½ cup unsweetened apple sauce
  • 1 tsp lemon juice
  • 3 tbsp brown sugar
  • ½ cup oat milk (or any milk)
  • 1 medium apple grated
  • 1 tsp cinnamon/li>
  • ½ tsp ground ginger
  • ½ cup cold butter
Directions

    Preheat oven to 400 degrees.

    In a medium bowl, whisk together the wet ingredients: the egg, apple sauce, lemon juice, sugar, and shredded apple.

    In a separate large bowl, stir together the dry ingredients: Pamela’s Scone Mix, cinnamon, and ginger. Once combined, add the butter and work it into the flour until it resembles coarse, damp sand.

    Pour the wet ingredients into the large bowl that contains the dry ingredients with Pamela’s Scone Mix. Stir until a dough forms and there are no more dry flour remains at the bottom of the bowl.

    Line a baking sheet with parchment paper. Add the dough and shape it into a large circle that’s about 1.5" thick. Bake the scones for 18-20 minutes in the fully preheated oven, or until they are just slightly golden brown on top. Allow the scones to cool completely before serving.
