Caramel Gluten Free “Blondies”

Ingredients

    Yield:

  • 1 cup Pamela’s Artisan Flour
  • 1 cup light brown sugar, packed
  • ½ cup butter, softened
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup white chocolate chips
Directions

    Preheat oven to 350°F. Line an 8″x8″ baking dish with parchment paper and set aside.

    In a standing mixer fitted with a paddle attachment, cream butter and sugar until light and fluffy, about 3 minutes. Add in egg and vanilla during last minute of mixing. Turn mixer speed to low and mix in flour, baking soda, and salt until just combined. Remove from standing mixer and fold in chocolate chips.

    Place dough into baking dish and smooth using the back of a spatula. Bake for 30 minutes. This will look like a mess. Allow it to cool for at least 30 minutes before placing it in the refrigerator to really cool down. Remove from pan and cut into 9 squares!
