- 2 sticks of butter
- 2 cups of sugar
- 4 eggs
- 2 tsp vanilla extract
- 1 tsp almond extract
- 3 cups Pamela’s Pancake & Baking Mix
- 1 tsp salt
- 1 can (21oz) of cherry pie filling
Yield:
Preheat oven to 350F.
In a bowl, beat butter and sugar together.
Once it's to a good consistency, add the eggs one at a time, then the vanilla and the almond extract.
Now, add the dry ingredients to the wet ingredients; Pamela's Pancake & Baking mix and salt. The consistency should form to a cookie-like dough.
Take the mixture and spread 3/4 of the dough to the bottom of a 9x11 greased pan. Then take the cherry pie filling and spread over the dough.
You will then top the pie filling with the remaining 1/4 of the batter. Spread out what you can. You will see the cherry pie filling peeking through.
Bake at 350F for 30-35 minutes.
You can either top with a glaze or vanilla ice cream.
