"Lemon Bars: A Zesty Slice of Sunshine"

- 1 cup butter, cold cut in a few pieces
- 2 cups Pamela’s Artisan Flour
- ½ cup powdered sugar
- Zest of 2 lemons Topping
- 4 eggs, large
- 2 cups sugar
- ¼ cup Pamela’s Artisan Flour
- 6 tbsp lemon juice
- 1 tsp baking powder
Yield:
BasePreheat oven to 350° with rack in the top third of the oven. Line an 8 x 11-inch baking pan with parchment paper and then lightly spray it with nonstick cooking spray.
Base
In a food processor mix all the ingredients under base by pulsing it until it forms a dough. Spead it evenly into the pyrex and bake for 15 minutes.
In a medium bowl, stir together eggs, sugar, flour, lemon juice, and baking powder. I used an hand mixer to make sure that there was no lumps.
Poor over the base when it still warm. Bake for 40 to 45 minutes (or until a toothpick comes out clean). Let it cooled completely.
Remove it entirely from pan using the parchment paper, sift powdered sugar evenly over the top, and cut into sixteen 2 x 2-inch or twenty-five 1¼-inch cookies. If serving the next day, wrap tightly and refrigerate. Sprinkle more powdered sugar over cookies before serving, if desired.
