Lemon Ricotta Pancakes

These Lemon Ricotta Pancakes are a delicious twist to our Pancake & Baking Mix. These pancakes are melt-in-your mouth soft and tender, while being fluffy. These are perfect pancakes for spring or summer.

Directions

    Mix all ingredients together. If batter is to thick, add a little water to thin it out.

    Heat skillet. Cook pancakes to liking, flipping once.

    Serve hot with syrup or fresh fruit.

Scrumptious pancakes

I made these for a breakfast themed potluck, and they turned out fluffy and scrumptious. I will make these again and again. When used with the pamelas pancake mix, they turn out tender on inside and slightly crispy on outside. Thank you!

Best pancakes ever!

these are truly the most delicious pancakes my husband and I have ever eaten - and he doesn't like much that is gluten free. But somehow the texture of the ricotta and the lemon taste make these like sooo rich and light at the same time. They freeze and then toast or heat in a pan incredibly well so they make fantastic quick breakfasts. I also sometimes add chopped pecans, and today am gonna experiment with blueberries. This mix is marvelous for all sorts of pancakes, but this particular recipe is out of this world!
