Breakfast Sandwiches

Here is the secret to the ultimate gluten-free biscuit breakfast sandwich. You need Pamela's Biscuit & Scone Mix, your favorite bacon, cheese, and eggs.     Preheat oven to 400F.

    In a bowl, use one bag of Pamela's Biscuit & Scone Mix. Put in 12 tsbp butter, cut into pieces, well chilled. Cut in chilled butter to the baking mix, until crumble like mixture is formed. Add 1 cup of milk and mix until well combined.

    On parchment paper lined baking sheet, using wet fingers, pat out dough 1 to 1 1/2 high round biscuits.

    Bake for 20-25 minutes until edges are brown.

    Once cooked and cooled, fill with egg, bacon and whatever other desired toppings. To get melted cheese, place the breakfast sandwich in the oven to allow cheese to melt.

    Serve and enjoy!
